SUPPOSEDLY my Prius arrives at the dealer next week. We'll see. What kind of gas does everyone use? Premium because you use less of it, or just the middle grade?

The manual recommends plain old regular.

I've been using 87 and have noticed no issues because of it.

Octanes vary depending on your area of the country, so your low/midgrade may be a different octane than coastal SoCal.

and do note the FTC articles on so-called "premium" fuel.

Prius' owner's manual (at least in North America) states to use 87 octane, which unless you live at a high altitude like Denver, CO, is usually the "regular" octane level.

Well, heck. This means I can't use high-octane fuel as a low-sulfur substitute. A catalytic convertor is certainly cheaper than a new engine...

Actually, the owner's manual says to use 87 octane "or higher" (p. 202). Nothing at all about higher octane being harmful, so I will use 93 octane as a lower-sulfur alternative.
